RECIPE: Jalapeno Vodka Mint Lemonade

I think I found my new favorite summer drink. My parents started growing fresh mint this summer. If you know mint, it grows absurdly fast, so there is always a bunch. Every time I visited I’ve been wanting to make something with it, but I haven’t ever used it before. Unfortunately, I’m not much of a mojito person, so I had to do some researching. I saw some versions of this drink online but made some tweaks. It’s no secret I like spicy, and this mint lemonade is so unbelievably light, I couldn’t help but add some jalapeño to the recipe. Best part? The recipe is filled with tons of fresh ingredients.

Ingredients:

  •  4 lemons
  • 1 lime
  • 2 cups of fresh mint
  • 3/4 cup of sugar
  • 8 cups of water
  • 2 cups of premium vodka (I used Three Olives)
  • Ice
  • 1 jalapeno (optional)

Directions:

1. Cut up lemons into fours. Make sure ends are cut off and all seeds are removed. (leave the skin)

2. Slice lime and jalapeño. Set aside.

2. Blend lemons, 2 cups of water, 3/4 cup sugar, a handful of ice, and 1 cup of mint until pureed. Since you are blending the lemon skin it’s still going to be slightly thick when done.

3. Use a strainer (with very tiny holes) to get only the liquid out of the blended contents.

4. Pour liquid into pitcher along with the 6 cups of water and 2 cups of vodka. Add ice.

5. Add in lime and the rest of the mint to the pitcher, stir.

6. For the jalapeño, I like spicy but not intensely spicy, I added one, 1 inch slice of the jalapeño to my personal drink and it was the perfect kick. Your crowd into spicy? Add the slices to the pitcher, daredevils.
